Don’t you love Spring?
We have been fortunate here in Buffalo to have had a pretty decent Spring. And last week certainly felt more like Summer than Spring but hey we won’t complain, right?
Easter is just a few short weeks away. And if you are hosting brunch, time to start planning your menu. What are some traditional foods you enjoy serving for Easter?
These Strawberries and Cream Pinwheels are fast and easy to put together. They make a great after school snack for your kids, or even to put in their lunches; you will love them too. These would also be a great appetizer to serve for your Easter buffet.
I created these a few weeks ago for my twenty month old twins. Aside from the fact they like to peel the pinwheels apart (what kid doesn’t) these are certainly a hit. They are creamy and a fairly healthy snack. Best part, they don’t take long to prepare.
Strawberries and Cream Pinwheels

8oz package cream cheese (light or regular)
1 cup fresh strawberries, diced
Pinch of cinnamon
4-5 flour tortillas
In a medium bowl combine cream cheese and strawberries and stir until blended. Spread cream cheese mixture on each tortilla and tightly wrap each up. Wrap in plastic wrap and place in refrigerator for several hours until set.
Using a sharp knife Cut slices and serve cold.
